Chicken Quinoa Tabbouleh Recipe #inspiremydinner

You ever love a dish and don't even attempt to make it because you know you won't do it justice?  I get that way about ethnic food.  Especially with tabbouleh.  The flavor is so complex, all the pretty chopped ingredients... I came across bulk seasoning for tabbouleh once and bought it but it's still sitting in my pantry.  I never even attempted to make it because it looks difficult to execute!  I went to a chef demo recently for quinoa tabbouleh and she made it look so easy.  But I like making things even easier and tweaked her recipe for this awesome easy dinner recipe!

First, get your chicken ready - I used Tyson Individually Frozen Chicken Breasts new flavor "Smokey Steakhouse".  These breasts are huge!  There are about 5-6 pieces in each package.  I put two pieces of chicken on a baking sheet and in 50 minutes they were done!  Here are the instructions... while that's cooking you can get to work on the tabbouleh!

Done!  Don't they look great?!  I snipped off a little piece to taste test cause that's what all good cooks should do and loved the flavor!  I knew it was the perfect match for my quinoa tabbouleh!
Tyson Smokey Steakhouse Seasoned Boneless Skinless Chicken Breasts
I am ready to #inspiremydinner!  Tell me this doesn't look good!  You can find all the ingredients at your local Walmart - look for the chicken in the frozen section!  Check out my shopping trip in my Google+ album!  (I actually had leftover cooked quinoa from a dish I made earlier in the week - cooked quinoa keeps for a few days!)
Chicken Quinoa Tabbouleh
Chicken Quinoa Tabbouleh Ingredients
1 cup cooked Quinoa
1/4 teaspoon Salt
Fresh Lemon Juice from 1 large Lemon
1 Garlic cloves, minced
1/4 cup Extra Virgin Olive Oil
Freshly ground Black Pepper
1 large Cucumber, cut into 1/4" pieces
10 Grape Tomatoes, quartered
3/4 cup Feta cheese, crumbled
2 Tyson Smoked Steakhouse Chicken Breasts, cooked and chopped

Directions
Whisk lemon juice and garlic in a small bowl.  Gradually whisk in olive oil.  Season dressing to taste with salt and pepper.

Mix in 1/4 cup dressing with quinoa.

Add cucumber, tomatoes and feta to bowl with quinoa; toss to coat.  Season to taste with salt and pepper.  Drizzle remaining dressing over and add Tyson chicken.

The recipe I adopted from called for mint and parsley, I honestly didn't think it needed it.  I know it's not keeping true to tabbouleh but trust me on this.  I thought the fresh bold flavors of the tabbouleh went well with the deep flavor of the Tyson Smoked Steakhouse Chicken Breasts.  Execution well done if I do say so myself!  Enjoy!
