I consumed ridiculous amounts of peanut butter when I was pregnant with my youngest son. I wanted to eat it every single day, three times a day sometimes. I had peanut butter cravings with my other pregnancies but this one was very different. I started experimenting with everything. Nothing gross though, I promise! My moment of food guilt when I found myself dipping chocolate bars in the jar. It was extraordinary - you know when food texture and taste are just magically sublime. My dream breakfast was always hawaiian rolls slathered with peanut butter, fresh bananas and strawberry jelly. There was a time when we were out of fresh bananas and I substituted for banana chips. Hello amazing! Back to my thing about texture and taste, the crunch of the banana chips really set it off. And next thing you know, I was shoving pretzels in my sandwiches too!
Peanut butter is the perfect, easiest ingredient for those mornings I was half awake and needed a yummy boost of energy. It also makes an awesome snack! With 7 grams per serving, peanuts have more energy boosting protein than any nut. Coupled with their more than 30 essential vitamins and nutrients, peanuts are considered a Superfood.
