It was wintery good here in Southern California for a couple weeks and today, it was an ugly 85 degrees. I was kinda mad about it because 11 months out of the year we're melting. To stay cool today, I made one of my favorite light treats - Coconut Pudding with Fresh Mandarin Oranges! Wait, what? Yep, coconut or vanilla pudding with mandarin oranges - it sounds funky and weird, right? But it is so refreshing. The haupia (coconut pudding) is slightly sweet and the mandarins are juicy and sweet. What is your favorite mandarin orange recipe?
I learned some fun facts about mandarin oranges:

Coconut Pudding Ingredients (recipe courtesy of Food.com)
1 (12 ounce) can coconut milk
4 -6 tablespoons sugar
4 -6 tablespoons cornstarch
3/4 cup water
1/2 teaspoon coconut extract (or vanilla extract)
Coconut Pudding Directions
Pour coconut milk into saucepan.
Combine sugar and cornstarch; stir in water and blend well.
Stir sugar mixture into coconut milk; cook and stir over low heat until thickened add coconut extract.
Pour into molds of your choice.
Peel and slice a Halos mandarin orange and eat!
